Harira is a hearty Moroccan soup blending tender lamb, chickpeas, lentils and tomatoes with aromatic spices. It’s often served to break the fast during Ramadan but makes a comforting meal any time.

- Lentils - 100 g
- Lamb - 250 g
- Vegetable Broth - 1 l
- Canned Tomatoes - 400 g
- Garlic - 3 cloves
- Tomato Paste - 2 tbsp
- Himalayan Pink Salt - 1 tsp
- Celery - 2 stalks
- Chickpeas - 200 g
- Parsley - 2 tbsp
- Ginger - 1 tsp
- Cilantro - 2 tbsp
- Onion - 1 pc
- Pepper - 0.5 tsp
- Lime - 1 pc
- Olive Oil - 2 tbsp
- Cinnamon - 0.5 tsp

Paso 1
Heat oil in a large pot over medium heat.
Paso 2
Sauté onion, garlic and celery until translucent.
Paso 3
Stir in ginger, cinnamon and tomato paste; cook 1 minute.
Paso 4
Add lamb, chickpeas, lentils, canned tomatoes and broth.
Paso 5
Bring to a boil, then reduce heat and simmer 45 minutes.
Paso 6
Season with salt and pepper, stir in parsley and cilantro.
Paso 7
Serve hot with lemon wedges.

For extra depth, brown the lamb first and garnish with a sprinkle of chopped herbs.
