Ingredients
- Cucumber - 1 pc
- Olives - 50 g
- Garlic - 1 clove
- Lemon Juice - 1 pc
- Couscous - 200 g
- Cherries - 150 g
- Parsley - 10 g
- Feta Cheese - 100 g
- Onion - 1 pc
- Salt - 0.5 tsp
- Pepper - 0.25 tsp
- Olive Oil - 30 ml
Directions
Step 1
Prepare 200 g couscous according to package instructions. Fluff with a fork and let cool.
Step 2
In a large bowl, combine cooled couscous, 1 diced cucumber, 150 g cherry tomatoes halved, 1 small red onion diced, 50 g sliced olives, and 100 g crumbled feta cheese.
Step 3
In a small bowl, whisk together 30 ml olive oil, juice of 1 lemon, 1 minced garlic clove, 0.5 tsp salt, and 0.25 tsp black pepper.
Step 4
Drizzle dressing over salad and toss gently to combine.
Step 5
Garnish with 10 g fresh parsley and serve immediately or chilled.
