- Vegetable Broth - 500 ml
- Cheddar Cheese - 150 g
- Garlic - 2 cloves
- Milk - 300 ml
- Flour - 20 g
- Broccoli - 200 g
- Onion - 1 pc
- Carrots - 100 g
- Salt - 1 pinch
- Olive Oil - 15 ml
Directions
Step 1
In a large pot, heat 15 ml olive oil over medium heat.
Step 2
Sauté 1 diced onion and 2 minced garlic cloves until soft, about 3 minutes.
Step 3
Stir in 200 g broccoli florets and 100 g shredded carrots. Cook for 5 minutes.
Step 4
Sprinkle in 20 g flour, stir to coat vegetables and cook for another minute.
Step 5
Gradually whisk in 500 ml vegetable broth and 300 ml milk, stirring until smooth.
Step 6
Bring to a simmer and cook until vegetables are tender, about 10 minutes.
Step 7
Stir in 150 g shredded cheddar cheese until melted and creamy.
Step 8
Season with salt and pepper, garnish with extra cheddar, and serve hot.
