Roasted Cauliflower Steak with Lemon-Tahini Sauce

Ingredients
- Garlic - 1 clove
- Lemon Juice - 20 ml
- Cauliflower - 1 pc
- Parsley - 10 g
- Salt - 1 tsp
- Pepper - 0.5 tsp
- Smoked Paprika - 0.5 tsp
- Olive Oil - 30 ml
- Tahini - 50 ml
Directions
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Remove the leaves from one head of cauliflower and cut it into 1-inch thick steaks.
Step 3
Brush both sides of the steaks with 30 ml olive oil and season with 1 tsp salt and 0.5 tsp black pepper.
Step 4
Place the steaks on a baking sheet and roast for 25-30 minutes until tender and golden.
Step 5
In a bowl, whisk together 50 ml tahini, 20 ml fresh lemon juice, 10 ml water (adjust for desired consistency), 1 minced garlic clove, and a pinch of salt (optionally add 0.5 tsp smoked paprika).
Step 6
Drizzle the lemon-tahini sauce over the roasted cauliflower steaks and garnish with 10 g chopped fresh parsley.
Step 7
Serve immediately.

For extra flavor, sprinkle a little smoked paprika over the cauliflower before roasting.
