This classic minestrone sautés onion, garlic and mixed vegetables in olive oil, then simmers beans and pasta in a rich tomato‑vegetable broth until perfectly tender.

Step 1
Dice 1 onion and mince 2 garlic cloves. Chop 1 carrot, 1 celery stalk and 1 zucchini.
Step 2
Heat 1 tbsp olive oil; sauté onion and garlic 3 min.
Step 3
Add carrot, celery and zucchini; cook 5 min.
Step 4
Stir in 800 ml vegetable broth, 400 g diced tomatoes and 1 cup beans; bring to a simmer.
Step 5
Add 100 g pasta; cook 10 min until al dente.
Step 6
Season with salt & pepper.
Step 7
Garnish with 2 tbsp chopped parsley and serve hot.
