Ingredients

  • Tomatoes - 150 g
  • Batat - 300 g
  • Lemon - 1 pieces
  • Carrots - 200 g
  • Salt - to taste
  • Pepper - to taste
  • Olive Oil - 3 tbsp
  • Cod - 4 pieces

Directions

  • Step 1

    Preheat the oven to 200°C (400°F).

  • Step 2

    Season the fish fillets with salt and pepper, and set aside.

  • Step 3

    Chop the tomatoes, carrots, and potatoes into bite-sized pieces.

  • Step 4

    Spread the vegetables evenly on a baking tray and drizzle with olive oil.

  • Step 5

    Place the fish fillets over the vegetables.

  • Step 6

    Slice the lemon and place the slices on top of the fish.

  • Step 7

    Bake for 20-25 minutes, until the fish is cooked through and the vegetables are tender.
