- Lentils - 0.5 cup
- Garlic - 1 cloves
- Himalayan Pink Salt - 1 to taste
- Vegetable Oil - 3 cups
- Vegetable Oil - 1 tbsp
- Parsley - 2 tbsp
- Onion - 0.5 pieces
- Beets - 1 cups
- Paprika - 0.5 tsp
Directions
Step 1
In a pot, sauté the onion and garlic in oil until softened.

Stir in diced sweet potato, lentils, paprika, salt, and vegetable broth.

Bring to a gentle boil, then reduce heat and simmer for about 20 minutes or until sweet potatoes and lentils are tender.

Use a spoon or potato masher to lightly mash some of the sweet potatoes for a creamier texture.
