Keto Cauliflower Fried Rice with Shrimp
A low-carb twist on fried rice using cauliflower rice and succulent shrimp, flavored with garlic, onion, and soy sauce.
Pulse cauliflower florets in a food processor until they resemble rice. In a large pan, heat 1 tbsp of olive oil and sauté 50 grams of finely chopped onion with 2 minced garlic cloves until fragrant. Add 150 grams of shrimp and stir-fry until they turn pink. Push the shrimp and vegetables to one side and scramble 2 eggs in the empty space. Once nearly set, mix everything together. Stir in the cauliflower rice and 1 tbsp of soy sauce, cooking for an additional 3-4 minutes until tender. Adjust seasoning with a pinch of salt if needed and serve hot.
