Vegetarian Zucchini Fritters with Yogurt Sauce

These zucchini fritters are a delicious way to enjoy fresh zucchini. Grated zucchini is mixed with chopped onion, minced garlic, flour, and a beaten egg, seasoned with salt and pepper, then pan-fried until crispy. Serve with a refreshing yogurt sauce made with lemon juice and fresh dill.

- Garlic - 1 clove
- Lemon Juice - 10 ml
- Zucchini - 400 g
- Yogurt - 150 g
- Parsley - 1 tsp
- Flour - 50 g
- Onion - 1 pc
- Salt - 0.5 tsp
- Pepper - 0.25 tsp
- Cornmeal - 15 g
- Eggs - 1 pc
- Olive Oil - 20 ml

Step 1
Grate 400 g zucchini and place in a colander. Sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture, then squeeze out the water.
Step 2
In a bowl, combine the grated zucchini with 1 finely chopped small onion, 1 minced garlic clove, 50 g all-purpose flour, and 1 beaten egg. Season with 0.5 tsp salt and 0.25 tsp black pepper.
Step 3
Heat 20 ml olive oil in a non-stick pan over medium heat. Spoon tablespoon-sized portions of the mixture into the pan and flatten them into fritters. Fry for 3-4 minutes per side until golden and crispy. Transfer to paper towels to drain excess oil.
Step 4
For the yogurt sauce, mix 150 g plain yogurt with 10 ml fresh lemon juice and 1 tsp chopped fresh dill (or parsley), and a pinch of salt.
Step 5
Serve the fritters warm with the yogurt sauce on the side.
Cook's Notes
For extra crispiness, add 1 tbsp cornmeal to the batter.
