Vegetarian Cauliflower Tikka Masala

Roasted cauliflower is simmered in a rich tomato sauce seasoned with aromatic spices like garam masala, turmeric, and cumin. Ingredients
- Garam Masala - 1 tsp
- Canned Tomatoes - 400 g
- Garlic - 2 cloves
- Turmeric - 0.5 tsp
- Cauliflower - 500 g
- Ginger - 1 tsp
- Cilantro - 5 g
- Onion - 1 pc
- Salt - 0.5 tsp
- Cumin - 0.5 tsp
- Chili Powder - 0.5 tsp
- Olive Oil - 30 ml
- Coconut Milk - 200 ml
Directions
Step 1
Preheat oven to 200°C (400°F).
Step 2
Toss 500 g cauliflower florets with 15 ml olive oil, 0.5 tsp salt, and roast for 20 minutes until golden.
Step 3
In a pan, heat 15 ml olive oil. Sauté 1 diced onion, 2 minced garlic cloves, and 1 tsp grated ginger until fragrant.
Step 4
Stir in 1 tsp garam masala, 0.5 tsp turmeric, 0.5 tsp cumin, 0.5 tsp chili powder, and cook 1 minute.
Step 5
Add 400 g canned tomatoes and simmer for 10 minutes.
Step 6
Stir in 200 ml coconut milk, roasted cauliflower, and simmer another 10 minutes.
Step 7
Garnish with fresh cilantro and serve hot.
