Keto Deviled Eggs with Avocado

A twist on classic deviled eggs, with creamy avocado mixed into the yolk filling, perfect as a low-carb snack.

Hard boil 6 eggs, peel and halve them. Remove the yolks and mash them with ripe avocado, mayonnaise, Dijon mustard, lemon juice, salt, and paprika. Spoon the mixture back into the egg white halves and garnish with chopped chives. Chill before serving if desired.

  • Avocado - 1 piece
  • Himalayan Pink Salt - 0.25 tsp
  • Green Onions - 5 grams
  • Meyer Lemons - 1 tbsp
  • Eggs - 6 pieces
  • Paprika - 0.25 tsp
  • Mustard - 1 tsp
  • Mayonnaise - 2 tbsp

Directions

  • Step 1

    Hard boil the eggs, peel, and halve them.

  • Step 2

    Scoop out the yolks and mash with avocado, mayonnaise, Dijon mustard, lemon juice, salt, and paprika.

  • Step 3

    Spoon the mixture back into the egg whites.

  • Step 4

    Garnish with chopped chives and serve (chill if desired).
