Ingredients

  • Vegetable Broth - 500 ml
  • Garlic - 4 cloves
  • Tomatoes - 800 g
  • Onion - 1 pc
  • Salt - 1 pinch
  • Olive Oil - 30 ml
  • Basil - 15 g

Directions

  • Step 1

    Preheat oven to 200°C (400°F).

  • Step 2

    On a baking sheet, place 800 g fresh tomatoes (halved), 1 sliced onion, and 4 cloves garlic. Drizzle with 30 ml olive oil, season with salt and pepper.

  • Step 3

    Roast for 25 minutes until softened and caramelized.

  • Step 4

    Transfer roasted vegetables to a pot, add 500 ml vegetable broth and 15 g fresh basil.

  • Step 5

    Bring to a boil, reduce heat, and simmer 10 minutes.

  • Step 6

    Blend the soup with an immersion blender until smooth.

  • Step 7

    Adjust seasoning to taste and serve hot, garnished with extra basil leaves and a drizzle of olive oil.
