Ingredients

  • Lentils - 200 g
  • Vegetable Broth - 500 ml
  • Garlic - 2 cloves
  • Tomatoes - 400 g
  • Celery - 1 stalk
  • Pasta - 300 g
  • Onion - 1 pc
  • Carrots - 1 pc
  • Oregano - 1 tsp
  • Olive Oil - 15 ml
  • Parmesan Cheese - 50 g
  • Basil - 5 g
  • Basil - 1 tsp

Directions

  • Step 1

    Heat 15 ml olive oil in a large pan over medium heat.

  • Step 2

    Sauté 1 diced onion, 2 minced garlic cloves, 1 diced carrot, and 1 diced celery stalk for 5-7 minutes until softened.

  • Step 3

    Add 200 g dried lentils (rinsed), 400 g canned diced tomatoes, 500 ml vegetable broth, 1 tsp dried oregano, 1 tsp dried basil, salt, and pepper.

  • Step 4

    Bring to a simmer, reduce heat, cover, and cook 25-30 minutes until lentils are tender and sauce thickens.

  • Step 5

    Serve hot over 300 g cooked spaghetti or pasta of choice, garnished with grated Parmesan and fresh basil.
