Ingredients
- Cucumber - 1 pc
- Olives - 100 g
- Lemon Juice - 15 ml
- Couscous - 200 g
- Cherries - 200 g
- Parsley - 10 g
- Feta Cheese - 100 g
- Onion - 1 pc
- Salt - 1 tsp
- Pepper - 0.5 tsp
- Oregano - 1 tsp
- Olive Oil - 30 ml
Directions
Step 1
Prepare 200 g of couscous according to the package instructions and let it cool.
Step 2
Halve 200 g of cherry tomatoes, dice 1 cucumber, thinly slice 1 red onion, and pit 100 g of olives.
Step 3
In a large bowl, combine the couscous with the tomatoes, cucumber, onion, and olives.
Step 4
Crumble 100 g of feta cheese over the salad.
Step 5
In a small bowl, whisk together 30 ml olive oil, 15 ml lemon juice, 1 tsp dried oregano, salt, and 0.5 tsp black pepper.
Step 6
Drizzle the dressing over the salad and toss gently.
Step 7
Garnish with 10 g chopped fresh parsley and serve chilled.
