This flatbread pizza is a quick and healthy meal that brings together a Mediterranean mix of flavors. The base is a soft flatbread spread with a layer of hummus, then loaded with sliced tomatoes, cucumber, red onion, pitted olives, crumbled feta, and fresh arugula. A final drizzle of extra virgin olive oil and a splash of lemon juice tie all the flavors together.

Ingredients
- Cucumber - 1 pc
- Olives - 50 g
- Tomatoes - 150 g
- Lemon Juice - 10 ml
- Naan Bread - 4 pcs
- Feta Cheese - 80 g
- Hummus - 100 g
- Onion - 0.5 pc
- Arugula - 50 g
- Olive Oil - 15 ml
Directions
Step 1
Preheat your oven to 200°C (400°F).
Step 2
Lay out 4 pieces of flatbread or naan on a baking sheet.
Step 3
Spread approximately 50 g of hummus evenly over each flatbread.
Step 4
Top with 150 g sliced tomatoes, 1 sliced cucumber (about 1 pc), and 0.5 thinly sliced red onion.
Step 5
Sprinkle 50 g pitted olives and 80 g crumbled feta cheese over the top.
Step 6
Add 50 g fresh arugula.
Step 7
Drizzle 15 ml extra virgin olive oil and 10 ml fresh lemon juice over the pizza.
Step 8
Bake for 10-15 minutes until warm and slightly crisp.
Step 9
Serve immediately.

For extra flavor, add a pinch of dried oregano to the flatbread before topping.
