Cooked spaghetti is tossed with a smooth sauce made from ripe avocados, cherry tomatoes, garlic, olive oil, and lemon juice, then garnished with fresh basil. Ingredients
- Avocado - 2 pcs
- Garlic - 2 cloves
- Lemon Juice - 1 pc
- Cherries - 200 g
- Pasta - 400 g
- Salt - 1 pinch
- Olive Oil - 30 ml
- Basil - 10 g
Directions
Step 1
Cook 400 g spaghetti according to package instructions. Drain and set aside.
Step 2
In a blender, combine 2 ripe avocados, 2 cloves garlic, 30 ml olive oil, juice of 1 lemon, and a pinch of salt and pepper; blend until smooth.
Step 3
In a large bowl, toss the cooked spaghetti with the avocado sauce until well coated.
Step 4
Gently fold in 200 g halved cherry tomatoes and 10 g chopped fresh basil.
Step 5
Serve immediately with additional basil or a squeeze of lemon if desired.
