Tom Kha Gai is a classic Thai soup made by simmering chicken and aromatic herbs in coconut milk and broth, flavored with galangal, lemongrass, kaffir lime leaves and chili.

Step 1
In a pot, combine 400Â ml coconut milk and 500Â ml chicken broth; heat over medium.
Step 2
Add 5 galangal slices, 2 bruised lemongrass stalks and 6 kaffir lime leaves; bring to a gentle boil.
Step 3
Stir in 300Â g thinly sliced chicken breast and 100Â g sliced mushrooms; simmer 5Â min.
Step 4
Season with 2Â tbsp fish sauce, 2Â tbsp lime juice and 1Â tsp chili flakes.
Step 5
Remove from heat, garnish with 2Â tbsp chopped cilantro and serve hot.
Cook's Notes
Adjust the heat with more or fewer chili flakes as desired.
