Ingredients

  • Garlic - 2 cloves
  • Tomato Paste - 1 tbsp
  • Himalayan Pink Salt - 1 to taste
  • Tomatoes - 1 cup
  • Vegetable Oil - 1 cup
  • Vegetable Oil - 1 tbsp
  • Teff - 0.33 cup
  • Onion - 0.5 pieces
  • Chili Powder - 1 tsp
  • Adzuki Beans - 1 cup

Directions

  • Step 1

    In a pot, sauté onion and garlic in oil until fragrant.

  • Step 2

    Add rinsed quinoa, black beans, diced tomatoes, tomato paste, chili powder, and salt.

  • Step 3

    Stir in water or vegetable broth.

  • Step 4

    Simmer for about 20 minutes, or until quinoa is cooked.

  • Step 5

    Serve hot, topped with fresh cilantro or avocado if desired.

Cook's Notes

Adjust spice level by adding more chili powder or a dash of hot sauce.
