Ingredients

  • Vegetable Broth - 1.2 l
  • Thyme - 1 tsp
  • Peas - 250 g
  • Parsley - 2 tbsp
  • Onion - 1 piece
  • Rainbow Carrots - 2 pcs
  • Salt - 1 to taste
  • Celeriac - 200 g
  • Olive Oil - 2 tbsp

Directions

  • Step 1

    Heat olive oil in a pot. Sauté diced onion, carrots and celeriac 5 min.

  • Step 2

    Add split peas and thyme; stir.

  • Step 3

    Pour in vegetable broth; bring to a boil.

  • Step 4

    Reduce heat and simmer 35 min until peas break down.

  • Step 5

    Season with salt & pepper.

  • Step 6

    Ladle into bowls and garnish with parsley.

Cook's Notes

For extra creaminess, blend a portion of the soup before serving.
