- Vegetable Broth - 500 ml
- Garlic - 2 cloves
- Tomatoes - 400 g
- Sweet Potatoes - 400 g
- Onion - 1 pc
- Salt - 1 pinch
- Cumin - 1 tsp
- Chili Powder - 1 tsp
- Bell Peppers - 1 pc
- Smoked Paprika - 0.5 tsp
- Black Beans - 400 g
- Olive Oil - 15 ml
Directions
Step 1
Heat 15 ml olive oil in a large pot over medium heat.
Step 2
Add 1 diced onion, 1 diced bell pepper, and 2 minced garlic cloves; sauté for 4-5 minutes until softened.
Step 3
Add 400 g sweet potatoes (peeled and diced), cook 3-4 minutes.
Step 4
Stir in 400 g canned diced tomatoes, 400 g canned black beans (drained), 500 ml vegetable broth, 1 tsp ground cumin, 1 tsp chili powder, 0.5 tsp smoked paprika, and salt and pepper to taste.
Step 5
Bring to boil, reduce heat, and simmer uncovered for 25-30 minutes until sweet potatoes are tender and chili thickens.
Step 6
Serve hot, garnished with fresh cilantro, sliced avocado, or a squeeze of lime juice.
