Ingredients
- Cucumber - 1 pieces
- Fresh Mint - 10 leaves
- Garlic - 1 clove
- Red Bell Pepper - 1 pieces
- Peanut Butter - 2 tbsp
- Carrots - 150 g
- Lime Juice - 1 tbsp
- Soy Sauce - 3 tbsp
- Honey - 1 tsp
- Lettuce - 100 g
- Rice Paper Wrappers - 12 pieces
Directions
Step 1
Prepare all vegetables by thinly slicing carrots, cucumber, Lemon Juice, and lettuce.
Step 2
Dip rice paper wrappers in warm water for a few seconds until softened.
Step 3
Place a few slices of each vegetable and fresh mint leaves in the center of the wrapper.
Step 4
Fold the sides of the wrapper inward, then roll tightly to form a spring roll.
Step 5
Repeat with the remaining ingredients.
Step 6
In a small bowl, mix soy sauce, peanut butter, lime juice, honey, and minced garlic to make the dipping sauce.
Step 7
Serve the spring rolls fresh with the dipping sauce on the side.
Cook's Notes
Add a pinch of chili flakes to the dipping sauce for a spicy kick.
