This Thai peanut vegetable noodle dish is a quick and flavorful meal that combines delicate rice noodles with a colorful mix of red bell pepper, julienned carrot, snap peas, and sautéed onion, all tossed in a spicy, creamy peanut dressing.

- Peas - 100 g
- Rice - 200 g
- Red Bell Pepper - 1 pc
- Peanuts - 10 g
- Rice Vinegar - 15 ml
- Peanut Butter - 60 ml
- Cilantro - 10 g
- Onion - 1 pc
- Carrots - 1 pc
- Lime Juice - 15 ml
- Soy Sauce - 30 ml
- Honey - 1 tbsp
- Sriracha - 1 tsp
- Olive Oil - 20 ml
Directions
Step 1
Prepare 200 g of rice noodles according to package instructions, drain and set aside.
Step 2
In a pan, heat 20 ml olive oil over medium heat; add 1 chopped onion and sauté until soft.
Step 3
Add 1 sliced red bell pepper, 1 julienned carrot, and 100 g snap peas; stir-fry for 3-4 minutes until crisp-tender.
Step 4
In a bowl, whisk together 60 ml peanut butter, 30 ml soy sauce, 15 ml rice vinegar, 15 ml lime juice, 1 tbsp honey (or agave nectar), and 1 tsp sriracha. If needed, add warm water to achieve a smooth, pourable consistency.
Step 5
Toss the cooked noodles and vegetables with the peanut sauce.
Step 6
Garnish with 10 g chopped peanuts and 10 g chopped fresh cilantro, then serve immediately.
