Ingredients

  • Tapioca Starch - 50 g
  • Sugar - 30 g
  • Mango - 100 g
  • Coconut Milk - 400 ml

Directions

  • Step 1

    In a saucepan, whisk coconut milk and tapioca starch until smooth.

  • Step 2

    Add sugar and bring to a gentle boil over medium heat, stirring constantly.

  • Step 3

    Once it thickens and the pearls become translucent, cook for 2 more minutes.

  • Step 4

    Remove from heat and let cool slightly.

  • Step 5

    Pour into serving bowls and chill for at least 1 hour.

  • Step 6

    Top with diced mango before serving.
