- Strawberries - 200 g
- Powdered Sugar - 100 g
- Butter - 80 g
- Sugar - 20 g
- Sugar - 30 g
- Crushed Cookies - 200 g
- Vanilla Extract - 5 ml
- Heavy Cream - 200 ml
- Cream Cheese - 400 g
Directions
Step 1
In a bowl, combine 200 g crushed graham crackers with 80 g melted butter and 20 g sugar. Press mixture into a 23 cm springform pan and chill for 15 minutes.
Step 2
In another bowl, beat 400 g cream cheese, 100 g powdered sugar, and 5 ml vanilla extract until smooth.
Step 3
Whip 200 ml heavy cream to soft peaks, then fold into the cream cheese mixture.
Step 4
Spread the filling over the chilled crust and refrigerate at least 3 hours.
Step 5
For the topping, puree 200 g fresh strawberries with 30 g sugar, then pour over the cheesecake or arrange sliced strawberries on top.
Step 6
Slice and serve chilled.
Cook's Notes
For extra flavor, add a squeeze of lemon juice to the cream cheese mixture.
