- Tomatoes - 200 g
- Chicken Breast - 400 g
- Thyme - 1 tsp
- Batat - 500 g
- Spinach - 100 g
- Carrots - 150 g
- Salt - to taste
- Pepper - to taste
- Olive Oil - 2 tbsp

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Peel and cube the sweet potatoes, and place them on a baking tray.
Step 3
Add diced chicken breast, sliced carrots, and chopped tomatoes to the tray.

Drizzle with olive oil and season with salt, pepper, and thyme.

Toss everything together to coat evenly.

Roast in the oven for 30-35 minutes, stirring halfway through, until the chicken is cooked and the sweet potatoes are tender.
