A vibrant, smooth soup made from roasted red bell peppers and aromatic herbs.
This soup begins by roasting red peppers until charred, then blending with sautéed onion, garlic and broth until silky smooth, finished with fresh basil.

Step 1
Roast 4 red bell peppers under a broiler until skins blacken; transfer to a bowl and cover 10 min.
Step 2
Peel, core and roughly chop peppers.
Step 3
In a pot, heat 2 tbsp olive oil; sauté 1 diced onion and 2 minced garlic cloves 4 min.
Step 4
Add roasted peppers and 800 ml vegetable broth; bring to a boil.
Step 5
Reduce heat and simmer 10 min.
Step 6
Blend until smooth.
Step 7
Stir in 10 fresh basil leaves and season with salt & pepper.
Step 8
Serve warm.
