Ingredients

  • Garlic - 2 cloves
  • Chicken Breast - 4 pieces
  • Parsley - 1 tbsp
  • Spinach - 1 cup
  • Salt - to taste
  • Pepper - to taste
  • Balsamic Vinegar - 1 cup
  • Soy Sauce - 1 cup
  • Heavy Cream - 2 tbsp

Directions

  • Step 1

    Heat olive oil in a large skillet over medium heat.

  • Step 2

    Season chicken thighs with salt and pepper and brown on both sides; remove from skillet.

  • Step 3

    In the same skillet, sauté onions, garlic, and bell peppers until softened.

  • Step 4

    Add mushrooms and cook for another 5 minutes.

  • Step 5

    Stir in crushed tomatoes, chicken broth, and Italian seasoning. Bring to a simmer.

  • Step 6

    Return chicken to the skillet, cover, and simmer for 30 minutes until chicken is tender.

  • Step 7

    Garnish with fresh parsley and serve hot over pasta, rice, or crusty bread.

Cook's Notes

For extra depth of flavor, add a splash of red wine to the sauce while simmering.
