- Tomatoes - 150 g
- Thyme - 1 tsp
- Lemon - 1 pieces
- Spinach - 100 g
- Carrots - 150 g
- Salt - to taste
- Pepper - to taste
- Olive Oil - 2 tbsp
- Cod - 4 pieces
Directions
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Cut the tomatoes and carrots into thin slices.
Step 3
Place a fish fillet on a piece of aluminum foil.
Step 4
Top with sliced tomatoes, carrots, and fresh spinach.

Drizzle with olive oil and season with salt, pepper, and thyme.

Add a slice of lemon on top of the fish.

Fold the foil into a packet and seal tightly.
