Ingredients

  • Tomatoes - 150 g
  • Thyme - 1 tsp
  • Lemon - 1 pieces
  • Spinach - 100 g
  • Carrots - 150 g
  • Salt - to taste
  • Pepper - to taste
  • Olive Oil - 2 tbsp
  • Cod - 4 pieces

Directions

  • Step 1

    Preheat the oven to 200°C (400°F).

  • Step 2

    Cut the tomatoes and carrots into thin slices.

  • Step 3

    Place a fish fillet on a piece of aluminum foil.

  • Step 4

    Top with sliced tomatoes, carrots, and fresh spinach.

  • Step 5

    Drizzle with olive oil and season with salt, pepper, and thyme.

  • Step 6

    Add a slice of lemon on top of the fish.

  • Step 7

    Fold the foil into a packet and seal tightly.

  • Step 8

    Repeat for all fillets.

  • Step 9

    Place the packets on a baking tray and bake for 20-25 minutes.

    Serve warm, directly from the foil packets for an easy and flavorful meal.
