Ingredients
- Garlic - 2 cloves
- - 2 cups
- Salt - to taste
- Pepper - to taste
- Bell Peppers - 4 pieces
- Balsamic Vinegar - 1 cup
- Heavy Cream - 1 tbsp
- Parmesan Cheese - 1 cup
Directions
Step 1
Preheat oven to 190°C (375°F).
Step 2
Slice the tops off the bell peppers and remove seeds and membranes.
Step 3
In a skillet, sauté diced onions, garlic, and chopped vegetables in olive oil until softened.
Step 4
Mix cooked rice, sautéed vegetables, marinara sauce, and half of the shredded cheese in a bowl.
Step 5
Stuff each bell pepper with the rice mixture and place them in a baking dish.
Step 6
Top each pepper with the remaining shredded cheese.
Step 7
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
Step 8
Serve hot with a side salad or crusty bread.
