Ingredients
- Ricotta Cheese - 1 cup
- Spinach - 2 cups
- Salt - to taste
- Pepper - to taste
- Balsamic Vinegar - 3 cups
- Heavy Cream - 1 tbsp
- Parmesan Cheese - 1 cup
- Lasagna Noodles - 300 g
Directions
Step 1
Preheat oven to 190°C (375°F).
Step 2
In a skillet, sauté zucchini, bell peppers, and spinach in olive oil until tender.
Step 3
In a bowl, mix ricotta cheese with egg, salt, and pepper.
Step 4
In a baking dish, spread a layer of marinara sauce, then add a layer of lasagna noodles, sautéed vegetables, and ricotta mixture.
Step 5
Repeat layers until all ingredients are used, ending with marinara sauce on top.

Sprinkle shredded mozzarella and Parmesan cheese on the top layer.
Step 7
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.

Let cool for 10 minutes before slicing and serving.
