Ingredients
- Garlic - 2 cloves
- - 400 g
- Parsley - 1 tbsp
- Spinach - 3 cups
- Salt - to taste
- Pepper - to taste
- Balsamic Vinegar - pinch
- Heavy Cream - 2 tbsp
- Heavy Cream - 1 cup
- Parmesan Cheese - 1 cup
Directions
Step 1
Cook pasta according to package instructions. Reserve 1 cup of pasta water, drain, and set aside.
Step 2
Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until golden brown.
Step 3
Stir in garlic and cook for 1 minute until fragrant.
Step 4
Add heavy cream and Parmesan cheese, and stir until the sauce thickens.
Step 5
Toss in the cooked pasta, and add reserved pasta water as needed to achieve desired sauce consistency.
Step 6
Season with salt, pepper, and a pinch of nutmeg.
Step 7
Serve hot, garnished with parsley and extra Parmesan.

For extra flavor, add a splash of white wine to the sauce while cooking the mushrooms.
