Ingredients
- Tomatoes - 200 g
- Pasta - 300 g
- Spinach - 100 g
- Carrots - 150 g
- Salt - to taste
- Pepper - to taste
- Olive Oil - 2 tbsp
- Basil - 4 tbsp
Directions
Step 1
Cook the pasta according to package instructions, drain, and set aside.
Step 2
Heat olive oil in a pan over medium heat.
Step 3
Add diced carrots and sauté for 3 minutes.
Step 4
Add chopped tomatoes and fresh spinach, and cook for another 2-3 minutes until softened.
Step 5
Stir in the basil pesto and mix well.
Step 6
Add the cooked pasta to the pan and toss to coat with the sauce and vegetables.
Step 7
Season with salt and pepper.
Step 8
Serve warm with a sprinkle of Parmesan cheese, if desired.
