Ingredients

  • Eggplant - 1 pieces
  • Thyme - 1 tsp
  • Couscous - 200 g
  • Zucchini - 1 pieces
  • Hummus - 200 g
  • Salt - to taste
  • Pepper - to taste
  • Bell Peppers - 2 pieces
  • Olive Oil - 3 tbsp

Directions

  • Step 1

    Cook the couscous according to package instructions and set aside.

    Slice zucchini, bell peppers, and eggplant into even pieces.

    Drizzle the vegetables with olive oil and season with salt, pepper, and thyme.
